Mother's Baked Chicken Sweet & Sour!



Mom here :) Penny is just way too busy following worker's in and out and in and out and waiting patiently to be oooooooohed and ahhhhhhhed over! Spike is frog hunting by the fish pond. He has been in a statue form for 2 hours ready to strike. HOP FROGS HOP! Toosweet has just yapped for 10 days straight!

Since this is Mother's Day week I'm going to share a recipe I found in my kitchen stuff that was written in my Mom's handwriting. I always love seeing that.


Baked Chicken Sweet & Sour



1 chicken in serving pieces.. salt sparingly

2 medium tomatoes diced

1 green pepper chopped

1 medium onion chopped

2/3 Cup water

1/2 Cup dried chopped apricot pieces or nectarines or fresh peaches

1/4 Cup Vinegar

3 Tablespoons tomato paste

1 Tablespoon Cornstarch

1 Small can or 3/4 C pineapple chunks in syrup

Make sauce of tomato, onion, pepper water, fruit, vinegar, tomato paste. Mix cornstarch with water and add to sauce. Cook until thick. Pour over chicken in baking dish.

Bake 20 minutes and add pineapple, COVER and bake 20 minutes longer.

  4. I copied it down. Something Bob can do in his dutch oven. It sounds good. I have that picture of mother too.
